Higher quality scalded sausages 

For producing the highest quality cooked sausage, flake ice (also called scale ice) is added to the meat emulsion during the mincing and preparation process. Our flake ice machines deliver exactly the ice quality that mixes perfectly with the sausage ingredients and keeps the temperature at the desired minimum.

In order to reduce the heat generated during the mincing of meat for the production of boiled and scalded sausage, a part of the water to be added is replaced by ice. The icing can amount to between 30 and 50 % of the sausage meat ingredients. The sausage meat temperature can thus be precisely and individually adjusted. Thanks to the large surface of the fine, one to two millimeter thick ice flakes, the ice mixes evenly with the material to be cooled within a very short time.

Flake ice is also added to adjust the curing brine temperature. Here, the general rule is that approximately 30% of the water is replaced by flake ice.

Another application for flake ice is the cooling of boiled and scalded sausages in a water bath. The temperature of the water bath can be lowered in an energy- and time-saving way by adding flake ice, without wasting large quantities of cooling water.

We make your ice handling simple and time-saving

To ensure that the ice solution fits into the process, Marel offers an extensive selection of equipment variants and practical accessories. Numerous installation options that have proven themselves in operational practice, such as intelligent ice silos for automatic dispensing, facilitate the storage, batching and daily handling of even large quantities of ice.

Insulated ice transport carts, into which the ice is produced directly, are available for the transport and temporary storage of up to 190 kg of flake ice. Intelligent chute systems allow several ice carts to be filled alternately. As soon as one cart is full, the ice discharge in the chute is automatically diverted to the next cart, or ice production is stopped when the maximum filling quantity is reached.

To produce larger quantities of ice in stock, the use of special silo systems is recommended. For smaller ice quantities between 300 and 1,800 kg, ITS silos with a bottom hatch are suitable. To avoid the need to shovel out the ice by hand, the silo bottom can be unlocked so that the flake ice falls directly into the transport trolleys placed underneath.

Large-scale operations that have to dose several tons of fresh flake ice in batches every day opt for silo systems with automatic extraction. Via one or more stainless steel screw conveyors, the desired ice portions are dosed out fully automatically and conveyed to the cutter car. A Marel floor scale connected to the system allows the exact weighing of the ice batches for the cutter.
